The MSc Food Safety Hygiene and Management course, offered by the University of Birmingham, is designed to train students on the practical application of scientific, technological and legal principles to understand and manage food safety issues. The course is open to all with a good undergraduate degree. The program implements the Hazard Analysis & Critical Control Point (HACCP) development process for addressing food safety issues. Course Content: The course has three major components: compulsory taught modules, research skills and a major research project. There is also a foundation module which allows students to look at microscopic and immunological techniques, data analysis and food production on a molecular level. The additional skills acquired will augment their research skill set.Key Modules: Some of the key modules are Food Safety Management, Methods of Microbiological Analysis, Microbial Hazards in Food and Novel Foods. Research projects form an integral part of the curriculum with students needing to use the skills they have acquired on their course to manage a food safety problem.
